Strawberry Syrup

Great alternative to maple syrup, and a generous serving (1/2 cup) is only 1 Point!

  • 5 cups strawberries (I thaw the sliced frozen strawberries from Sam’s)
  • 2 Tablespoons sugar
  • 1 Tablespoon Flour
  • 1/4 cup maple syrup

I stir these together in a 2 qt saucepan until the mixture is soupy and begins to thicken.  When I want it pourable, I run it through the blender before it gets too hot then return it to the pan to thicken.

I let it reduce (boil the wet away) til it’s about 3 cups of sauce (this makes the points easy).

If you’re making pancakes at the same time– recommended!– the combination of hot syrup and fresh pancakes can’t be beat.
