Cold and Sweet Dessert

The ice cream my husband and I used to buy regularly is 3 Points per 1/2 cup.

When I was just starting WW, I was willing to eat my familiar ice-cream-with-baking-cocoa and just have a smaller dessert than I was used to.

It was good practice in appreciating what I had, rather than going for full.

But then it got *hot* and I wanted more volume as well as taste.  The Frosty helped some, but it was still expensive (points-wise) and if I hadn’t been careful through my day I didn’t have enough left when I needed them most: after dinner.

The alternative I found didn’t include chocolate, but it was great for the heat and much more filling for the same 3 Points:

  • 1 cup plain yogurt
  • ¼-½ tsp vanilla (to taste)
  • 1-2 tsp sugar (to taste)
  • 1 cup chopped pineapple
  • 4 graham cracker squares (two full crackers)

Mix the flavorings into the yogurt, then divide between two cups and add half the remaining ingredients to each.

If you are the only person interested in this dessert (Yay! It won’t be gone when I was looking forward to it!), wait to add the graham crackers to the second serving.

Otherwise you have a few options:

  • use the crackers as an edible spoon (the kids’ favorite choice)
  • Crumble the crackers on the bottom of the bowl before pouring the yogurt in (reminiscent of cheesecake, in theory)
  • Mix the broken crackers in with the pineapple.

All very good for the heat, and even works well for camping (I ate this instead of making s’mores.  Does that make me a diet-geek?)

Also very good when you want to feel *full* after dessert, or want a cold breakfast.

Have I mentioned I like this? (But then, that’s why it’s even on this blog.)

  1. Awesome Amy! I am always looking for new recipes that ‘fit’ the WW plan. This week I’m going for popcorn, from corn kernals to keep the points down, and sugar free jello. The jello isn’t my favorite anymore but it is something sweet. Also, if you take out the crust of an apple pie the points are very reasonable. Angel food cake is a great way for cake to be factored into the WW plan and not kill everything. (That was what I did for my birthday, although I think the ice cream cancelled that out!) Anyway, I hope WW is going well for you, I made my first goal while on vacation. On to the next one!

  2. This has “endless” variations hanging on small tweaks.

    If you want to eat the whole recipe it will cost you 8 points (because of the weird way points are mapped).

    The way to have more of this w/o shooting so many points is (first) to use low-fat graham crackers (2=2 points, rather than 3) and drop the sugar (with the vanilla to enhance sweetness I’ve found the increase in graham crackers makes it sweetness level work.

    Another variation I tried yesterday was mixing 1/2 cup plain, no-fat yogurt with 1/2 cup low-fat vanilla, for a 3pt base.

    I didn’t realize how used to fat-free I’d become till low-fat (i.e., the presence of fat) seemed positively decadent.

    Yes, I’m a geek.
